took to make a successful marriage. Too be honest, I never really thought about
it, I was 18!! What did I care? <span style="mso-spacerun: yes;"> </span>I just
wanted to date around and have fun.<span style="mso-spacerun: yes;"> </span>My
only thoughts on that topic were; he needs to be tall, dark, handsome, athletic,
and a great kisser.<span style="mso-spacerun: yes;"> </span>In the summer of
2004, I was on a road trip with my dad.<span style="mso-spacerun: yes;">
</span>We were somewhere in New Mexico, between the middle of know where and what
felt like the end of the world.<span style="mso-spacerun: yes;"> </span>I was
board, and with nothing on the radio, and me not able to keep my mouth shut for
very long in total silence, it was only a matter of time before I’d say
something. <span style="mso-spacerun: yes;"> </span>Out of nowhere, I asked my
dad to teach me something, anything.<span style="mso-spacerun: yes;"> </span>My
dad knew I had started dating, so of course he brought up some very important
things I needed to look for when it came time for marriage. </span></div>

</span>He told me the number one thing the guy needs is, to be nice.<span style="mso-spacerun: yes;"> </span>Thinking to myself, “I already knew
that!”<span style="mso-spacerun: yes;"> </span>But my dad had to clarify with me
that that was very important because that was how his first marriage, with my
mother, ended (my mom was at fault).<span style="mso-spacerun: yes;"> </span>He
got my nod of approval, and I asked him to continue.<span style="mso-spacerun: yes;"> </span>He even told me the importance that any guy
who wanted to marry me needed to be clean and worthy.<span style="mso-spacerun: yes;"> </span>Or in other words, cannot have any problems with
pornography.<span style="mso-spacerun: yes;"> </span>I was like, “Okay, dumb
question, Why is that so-o important? Why does the church talk about that so
much?”<span style="mso-spacerun: yes;"> </span>What I thought would be a
conversation that would end at the next gas station stop, lasted till we
stopped for the night.</span></div>

conversation and realized that my so called list of qualities I wanted in a
future spouse had changed drastically.<span style="mso-spacerun: yes;">
</span>Around that time of my life I was probably one of the most shallow girls
you could ever meet.<span style="mso-spacerun: yes;"> </span>What I’m trying to
say is; I was mean, cocky, demanding, selfish, and vain, yet I got asked out
all the time.<span style="mso-spacerun: yes;"> </span>So I knew it wasn’t my charming
personality that kept these guys around.<span style="mso-spacerun: yes;">
</span><span style="mso-spacerun: yes;"> </span>I didn’t feel the need to change
my ways.<span style="mso-spacerun: yes;"> </span>I had the whole mindset of,
“If you don’t ask me out, it’s only a matter of time before your friends do!”</span></div>

want to get married; let alone have children. <span style="mso-spacerun: yes;"> </span>I stopped caring about church and would go out
dancing almost every night of the week, literally.<span style="mso-spacerun: yes;"> </span>What
most people don’t know is while I was living my selfish lifestyle, I started
getting really depressed.<span style="mso-spacerun: yes;"> </span>I didn’t know
why, maybe because I was finding out that the ladder I was climbing was leaning
against the wrong wall.<span style="mso-spacerun: yes;"> </span>Over the next
few months my health was getting worse, I tried to hide it but there is only so
much one can do.<span style="mso-spacerun: yes;"> </span>The pain was too much
to handle, and no one believed I was sick. I knew I was going to die, and I
would pray to get better.<span style="mso-spacerun: yes;"> </span>I started
feeling horrible for how I’d been living my life.<span style="mso-spacerun: yes;"> </span>So I changed everything, just like that,<span style="mso-spacerun: yes;"> </span>I made plans to give up my "lifestyle", turn in my high heels and 40 different shades of lip-gloss for some
shoes that didn’t have a heel "AKA flats" oh my!, and pastel colored tops.<span style="mso-spacerun: yes;"> </span>That’s right! I was making plans to serve a
mission.<span style="mso-spacerun: yes;"> </span>I talked with my family and
they loved the idea, yet it was hard to believe that I was actually planning
that; <span style="mso-spacerun: yes;"> </span>I even got my grandpa to pay for my
mission.</span><br />
<span style="font-family: "Times New Roman","serif"; font-size: 12pt; line-height: 200%;"> I thought that if I did a 180* and
turned my life around, God would forgive me.<span style="mso-spacerun: yes;">
</span>I didn’t get very far when it came to sending my paper in.<span style="mso-spacerun: yes;"> </span>In fact, I never did.<span style="mso-spacerun: yes;"> </span>I was missing one important thing…I couldn’t
pass the physical.<span style="mso-spacerun: yes;"> </span>That ended up being
the reason I never served a mission.<span style="mso-spacerun: yes;"> </span>I
was distraught, and heartbroken.<span style="mso-spacerun: yes;"> </span>So I
went to Plan B—go back to school.<span style="mso-spacerun: yes;">
</span>It didn’t take long before I found out about Eastern Arizona
College.<span style="mso-spacerun: yes;"> </span>Got accepted, and picked out a
full schedule of classes.<span style="mso-spacerun: yes;"> </span>Once again my
problem didn’t go away, I was still sick.<span style="mso-spacerun: yes;">
</span>About a week later I got my MRI results and they were anything but good
news.<span style="mso-spacerun: yes;"> </span></span></div>

<span style="font-family: "Times New Roman","serif"; font-size: 12pt; line-height: 200%;"><span style="mso-spacerun: yes;"> </span>I had a brain tumor!! To make a long
story short,<span style="mso-spacerun: yes;"> </span>I lost all my hair, stopped
getting offers for dates, lost my friends, my memory, I was paralyzed and
couldn’t walk, & the guy I was dating at that time wanted nothing to do with
me, or so I thought?<span style="mso-spacerun: yes;"> </span>Life was anything
but what it used to be.<span style="mso-spacerun: yes;"> </span>But, at the same
time I learned a lot of things being stuck in that hospital room for a
month.<span style="mso-spacerun: yes;"> </span>In a way that whole experience
will later help me in life, I’ve learned a lot about patience and how it is
very important for me to marry someone with it.<span style="mso-spacerun: yes;">
</span>I’ve decided I really want children, and lots of them.<span style="mso-spacerun: yes;"> </span>I want a guy who knows that looks aren’t
everything; and at the same I must admit I’ve learned that as well.<span style="mso-spacerun: yes;"> </span>I want a husband who loves adventure as much
as I do.<span style="mso-spacerun: yes;"> </span>I want to see more of the
world, and I need someone who can keep up with me.<span style="mso-spacerun: yes;"> </span>I love to cook and know I can contribute that
to a marriage and at the same time I wouldn’t mind if my future husband knows
how to cook, so I can have a break every now and then.</span></div>

mission at the time I wanted to I would really want a guy who would be open to

that in mind I need someone who will want to study the scriptures with me and
me a great father to our future family.<span style="mso-spacerun: yes;">
</span><span style="mso-spacerun: yes;"> </span>My only hope is that I
can be a great mother and raise some great children.<span style="mso-spacerun: yes;"> </span>I’m glad I had all those trials in my life;

All three tests came up negative. :(<br />
It was about two weeks before the fall 2011 semester came to an end, I received a call from my dad, inviting Mauricio and I to spend Christmas in Texas. Excited about the offer, I called my husband and asked if he was up to spend part of the Christmas break in Dallas, Texas. <br />
<br />
Two weeks later we were on a flight to Dallas. This was Mauricio's first time visiting the Moon family. After getting off the airplane my dad was there to pick us up. The first night we were in town we went to my favorite salsa club, Glorias, <a href="http://www.gloriasrestaurants.com/index.php">http://www.gloriasrestaurants.com/index.php</a>. While we were out dancing I started feeling weak/dizzy/extra hungry. But I ignored it, drank my virgin mango margarita, and keep on dancing until 2 a.m.<br />
<br />
A few days later we went and took a tour of The Dallas Cowboys stadium. Thinking about food the whole time I was miserable, I always felt extra tired and weak. It was weird, I would always talk about how much I wanted to move back to Dallas and live there, yet when I finally had the opportunity to go, I couldn't stop thinking about going back to Utah.<br />
The last morning my dad took us to Smoothie Factory <a href="http://www.smoothiefactory.com/">http://www.smoothiefactory.com/</a>. I ordered a smoothie, after only two sips, I turned thinking I was going to throw up all over the floor. fortunately, I didn't. Yet, I couldn't eat anything that morning and so my dad took us to the airport. <br />

It was a 2 1/2 hour flight back to Utah, and I thought I was going to die! I was so-o hungry. On the drive home we stop by the store to pick up a maternity test. When we got back to our apartment that was the 1st thing I did!<br />

<li class="step" sb_id="ms__id1067"> Heat a saucepan to medium high and add a tablespoon of oil. Carefully pour in the green sauce and cook, stirring constantly to thicken up, about 3 minutes. I like to put corn tortillas on the stove top burner or on a pan and let it get a little dark around the sides, takes about a minute or two for both sides. You want them golden and a little hard. Place under towel to steam. </li>
<li class="step" sb_id="ms__id1067"> One by one dip the tortillas in the sauce, place in an ungreased 9 x 13-inch baking dish, fill with some chicken, and roll up. Fit each enchilada snugly next to the other in the baking dish. Pour the remaining green sauce over the enchiladas. Sprinkle the cheese on top. Bake for 15 minutes, or until the sauce is bubbling and the enchiladas are heated through.

<li class="step" sb_id="ms__id1067"> Meanwhile, toss the lettuce, radishes and tomatoes with the remaining 2 teaspoons of oil, the vinegar, and salt and pepper. Layer the salad on top of the hot enchiladas and serve immediately.</li>

<li class="step first"> To make the filling, heat a large skillet over medium heat, and then swirl in the olive oil. Add the onion and bell peppers. Saute until the onion is translucent, 3 to 4 minutes. Raise the heat to high and add the beef. Cook, stirring constantly to brown, about 5 to 7 minutes. Add the cumin and cook for another minute.</li>
<li class="step"> Stir in the olives, raisins, honey, salt, pepper, and hot sauce. Cook until the meat is golden brown, the liquid has evaporated, and the flavors have blended, about 4 more minutes. Cool the mixture completely in the fridge. Stir in the egg whites.</li>
<li class="step"> Preheat the oven to 375 degrees Fahrenheit. Butter or line a baking sheet.</li>
<li class="step"> To form the empanadas, work with half of a disk of dough at a time, rolling out on a floured surface. Using an overturned bowl (about 5 inches across), cut out circles about 3 or 4 at a time from each piece of dough. Gather all dough scraps together, reroll once, and cut. Place 1/4 cup filling on one side of a dough circle. Wet the edges of the dough with water. Fold the dough over to form a half circle. Pinch the edges of the dough together. Crimp the edges with a fork. Repeat the process until all the filling is used. The empanadas can be frozen at this point.</li>
<li class="step last"> Place the empanadas on the prepared baking sheet and chill for a few minutes. Prick each pie on top twice with a fork. When ready to bake, beat the egg yolks with 1 tablespoon water. Brush the egg wash over each empanada. Bake for 20 to 25 minutes, until golden brown. Let rest for 5 minutes before serving. The empanadas can be cooled and frozen to reheat in a microwave.</li>

<li class="step first"> Process the butter, cream cheese, and cream in a food processor, electric mixer, or by hand to thoroughly combine.</li>
<li class="step"> Add the flour and salt. Process just until combined and the dough holds together in a ball. Turn the dough out onto a well-floured surface. Divide into 2 pieces. Flatten into disks and wrap each in plastic wrap. Refrigerate for at least 30 minutes before rolling out. If the dough is chilled overnight, take it out 15 minutes before rolling out.</li>
<li class="step last"> Rub flour all over a rolling pin. Working with one dough disk at a time, place the disk on a clean, well-floured surface. Applying some pressure with the rolling pin, roll gently from the center of the dough to the top and bottom edges. Rotate the disk and roll to the top and bottom edges again. Reflour the work surface and rolling pin, turn the dough over, and continue to roll the dough from the center out to the edges. Turn over and roll again, rotating the disk to ensure even rolling until the dough is about 12 inches in diameter, thin but not transparent.</li>

Once upon a time in the year 2002, in a foreign land far far away, there lived a prince who was getting ready to celebrate his 16th birthday. He was very excited about his party and invited all of his friends in the kingdom. During the party there was a girl that he did not know... But when he wanted to approach and meet her, she was gone, and didn't leave a shoe or any other clues behind!! Saddened, by the fact that he never meet her...he continued on with his life in the kingdom of Bolivia searching for a girl he had never meet. <br />

Over two-thousand miles away in Dallas, Texas, lived that girl, Valerie. She was shy and always kept a low profile in public. She and her family took a vacation to Europe for the 2006 World Cup. A few years after returning she was able to move to the land of Utah where she could be closer to her mother.<br />

After three years had passed in Bolivia the prince and his family decided to return to the land of his birth, Utah. Soon after the prince received his mission call to serve in the Brussels Belgium/Netherlands mission.<br />
A few months before Valerie's big move to Utah. She was on her sister's profile on facebook when she stumbled upon a picture of a prince named Mauricio. Not knowing she had already met him before, she added him as a friend.<br />
<br />
After just two months of dating the prince proposed to Valerie in front of the Salt Lake City, Utah temple. They were married two months later on January 28th 2011, in the Draper temple.<br />
